We are an in-house caterer who works for many organisations which have strong environmental policies. We would like to show them we are working to improve our environmental performance. How can we ensure we meet their expectations?

Utilities used by an in-house caterer are often absorbed by the client company and represent an extra cost which is not always budgeted for. Caterers that can show they are managing their resource use may also be able to demonstrate reductions in the total cost of the service.

Does our pub need to comply with the packaging regulations?

If a pub, or pub operating company, handles more than 50 tonnes of packaging and has a turnover of £2million per year it will be obligated under the packaging regulations. The packaging handled by pubs includes bottles and cans sold at the bar. Chains which include franchisees should also take account of the tonnage handled by the licensee or franchise (unless the franchisee is obligated on their own account). More information...

What regulations apply to waste cooking oil? What happens to the oil collected by my supplier?

Waste cooking oil should not be disposed of to drain, and cannot be fed to animals under the Animal By-Products Regulations. Catering establishments that consign their waste oil for animal feed are committing an offence. Collectors of oil are expected to send it for biodiesel or incineration with energy recovery. The Duty of Care applies to waste cooking oil, and you should check the waste carriers licence of the collector and keep records such as transfer notes.

Is disposal of food waste via a macerator unit to sewer acceptable?

Disposal of food waste to sewer can lead to blocked drains and increased load on sewage treatment plants. Disposal of anything to sewer other than domestic sewage and rain water will require a Trade Effluent Consent or Agreement from the sewage undertaker.

I am refurbishing my pub, how can I make it more environmentally sound?

A renovation is the perfect time to incorporate good environmental practice into the design. Think about recycling systems, rainwater harvesting (for plant watering or toilet flushing), low water and low energy appliances. Retaining more of the former structure can reduce waste in the construction process. Water-efficient devices on the water technology list can qualify for Enhanced Capital Allowances, which allows businesses to write off 100% of the investment against their taxable profits. For re-use of items and equipment you no longer need try contacting NISP for a waste exchange.
